Swinton Park’s charismatic Michelin-trained Chef Director, Stephen Bulmer, is one of the stars set to feature at the Dales Festival of Food and Drink taking place this Bank Holiday weekend.
Stephen will hold a seasonal foraging-themed demonstration on Monday 5th May at 1pm, cooking up treats using ingredients sourced straight from the 20,000 acre Swinton Estate in the Yorkshire Dales. Treats on offer will include Dandelion-Flower Bhajis, Wild Garlic Pesto, Nettle Risotto, Gorse Flower Pannacotta, Outdoor Rhubarb with Sweet Cicely.
Stephen runs the Swinton Park Cookery School at castle hotel, Swinton Park, where a range of classes are available including the ‘Wild About Food’ class. On this one-day course, guests begin by foraging on the estate for wild mushrooms, wood sorrel, rowan berries and wild garlic, before returning to the kitchen to create delicious gourmet dishes using the freshly sourced ingredients.
