The Yorkshire Dales Food Podcast – FreshFood

During the summer Ian Smith and I have run a small Foodie Feature on our local radio station Fresh Radio, you can catch us on the Steve Joy Afternoon Drive Show, Wednesday afternoons between 2pm and 3pm.

As we have the occasional guest in the studio we have been recording material for a series of pod-casts including interviews with chefs, food producers and suppliers.  We even venture out for the odd outside broadcast including tastings, sausage making and wild food foraging.

The podcast includes our foodie ramblings about new foods, tastes, recipes, ours & the guests experiences, from butchery and sausages to seasonal foods, foraging, vegetable gardens, grow your own, chef talk and interviews with chefs, local suppliers, producers, chefs and farmers.

The Trip – BBC2, Rob Brydon & Steve Coogan

Why do you ask are we writing a blog post about a BBC2 comedy with Rob Brydon & Steve Coogan?  Well “The Trip” will be a six part comedy series on BBC2 airing in the Autumn about a food critic touring six different restaurants for review and features some of our great Northern Restaurants in the Lakes and the Yorkshire Dales.

During filming and as part of the show the film crew visited L’enclume in Cartmel, recently voted number 4 in the top ten restaurants in the country and a restaurant I have not tried yet but is surely on my “must try” list!  The Angel at Hetton, a local favourite of ours, The Inn at Whitewell and Hipping Hall another family favouritenear Kirkby Lonsdale.  Whilst filming at The Angel the crew stayed at The Lister Arms in Malham and did a bit of sightseeing around Malham including Gordale Scar and then over to The Devonshire Arms at Bolton Abbey and some splashing about in the river on the stepping stones.

The first episode featuring The Inn at Whitewell is scheduled for November the 1st 2010 on BBC2 at 10pm.

Le Game Cock, Austwick

I have frequented The Game Cock in Austwick for a long time & it really has not changed much in 20 years, a traditional Yorkshire Dales pub set in fantastic scenery close to the 3 peaks and the Norber Erratics.  The Game Cock has always had a cosy bar with roaring fires in winter and good filling food but something was different!  it’s not the building, which but for a few minor changes to the layout remains the same as I remember, welcoming, warming & atmospheric with friendly staff but wait the staff and that accent? Mmmm, sounds like an “offcumdun” !

The accent and the eclectic menu betray the origins of these very hospitable offcumduns,  Eric, Maree and Family.

The Menu: Moules, Coq au Vin, Bœuf Bourguignon, Galettes, Crepes and other typical French dishes sit side by side on the menu with meat pies, homemade burgers, Italian meatballs & fish & chips.  Specials on the day we visited included Lapin a la moutarde – slow cooked rabbit in mustard sauce with potato gratin and Lamb Shank with red wine & rosemary sauce served with chive mash.

The Food: We devoured starters to share of a large dish of Moules Mariniere with all the trimmings of fresh bread & finger bowl along with the French platter which consisted of a good selection of charcuterie, salad & a game terrine.  To follow, Gamecock giant burger, which was home-made from locally sourced beef and topped with 3 massive onion rings, cheese and pancetta.  Crispy duck pancake (French Crepe Chinese style!) and Boeuf Bourguignon with Dauphinoise potato.

The Beer: we tried a pint of Thwaites, Wainwright and albeit from the other side of the border (Lancashire not France) it was a well kept, velvety smooth golden ale, 4.1% abv.

I can recommend you visit and we will be going back for more Moules and maybe the Lapin a la moutarde…

Beetroot Chutney Time

It’s Beetroot Chutney time again folks, after the success of last years batch of Beetroot Chutney I am repeating the same recipe again but with slightly less sugar.   My full beetroot chutney recipe here.

Of course we are going a step further this year with the home-grown ingredients as not only does it include Malham Show Prize winning beetroot but my Silver Cup prize onions as well! oh fantastic apples from a neighbours garden.  So just the vinegar & sugar to buy tomorrow before the purple hand gang can get together again and gently peel the purple beets in preparation for the chutnification!

Malham Show – Silver Cup!

Malham Show took place over the Bank Holiday weekend and what another fantastic day, spoilt only by a few showers in the afternoon (chucked it down!).   Our hog roast went down a storm, we sold out by 2.30pm and to my amazement I won a cup with my onions!

Other prizes included: 3 onions local- 1st, 2 beetroots – 2nd, 3 onions dressed – 2nd, 3 potatoes – 3rd, 2 beetroots with tops – 3rd, elderflower lemonade – 3rd.

Scrambled eggs on toast – chive & chorizo version!

Fancied Scrambled Eggs for breakie but it needed a twist, so I added some fresh cut chives from the herb garden and my stock ingredient a couple of fried slices of Yorkshire Chorizo, even if I say so myself, it was really rather good!

Yorkshire Chorizo Tart

Couldn’t resist trying my own version of Lynn’s Chorizo tart for a simple quick lunch.

  • shortcrust pastry rolled out to size on a baking tray.
  • smoother pastry base with tomato puree
  • sprinkle with Cheddar cheese (from my cave aged truckle)
  • add a few toppings of your choice, I used sliced red onion and peppers
  • then top with lots of thinly sliced Yorkshire Chorizo

These were really very very tasty, the faggot’s had a fantastic meaty pate taste, complimented by a rich gravy and served with seasonal garden peas and broad beans and the extra special “Pork Trotter Mash”.

7 Specialty Foods of Yorkshire, England

Yorkshire, the largest county in the UK, is centred around the city of York, which is world-renowned for its food culture. With York’s plentiful cafes, food festivals, and growing reputation for superior locally-grown foods, it is a paradise for “foodies.”

When mentioning the rich specialty foods of Yorkshire, for most people, the first thing that comes to mind is Yorkshire pudding. But after spending any length of time in Yorkshire, you will soon find out that Yorkshire pudding is just a starting point for a variety of delicious local food choices.

Below we will explore some of the specialty foods of Yorkshire, starting with the famous Yorkshire pudding.

Made of a savoury batter of flour, eggs and milk, this dish originated in North-East England. Historically, the batter was kept underneath meat roasting on a spit, allowing meat and oil drippings to add flavour to the batter. When dinner was served, if there was not enough meat to accommodate the number of diners, then children would instead be served this batter which came to be known as Yorkshire pudding. Today, this batter is made and served as a side dish for meat and vegetables, comprising a traditional Sunday dinner.

The town of Wensleydale in Yorkshire is known for their famous, unique-tasting cheese.  There are five different main types of Wensleydale– mild, matured, extra matured, blue or cold-smoked—although other varieties exist.  Because of its hint of honey flavor and acidity, Wensleydale cheese is best paired with sweeter fare such as fruit.

Yorkshire is so well-known for rhubarb production that a nine-square-mile area of the county is known as Rhubarb Triangle. The rhubarb plant’s stems are boiled in sugar and used for everything from jams to pies to compotes.  A food, drink and rhubarb festival occurs every year in Wakefield.

First made in the mid 1700s as an alcoholic drink, ginger beer is similar to ginger ale but infused with a more spicy ginger taste. Currently most ginger beer beverages are non-alcoholic so that anyone can enjoy them.

Once used only for medicinal purposes, liquorice is now sweetened and recognised as confectionery (often known as ‘licorice’).  A celebration of Pontefract, the person responsible for sweetening liquorice, is held at the annual Pontefract Liquorice Festival.

Some people refer to pikelets as “flat crumpets” or “think pancakes.”  These fluffy breads have a similar taste and texture as crumpets, but with many regional variations.

7) Parkin

Another item that uses ginger is parkin, a cake of butter, honey, flour, oats, treacle and ginger. Traditionally, this cake is made to be served around Guy Fawkes Night.
