This great little Chutney Festival returns for the 5th time on Saturday the 20th of October with celebrity judges Clarissa Dickson Wright and Elaine Lemm.

10.30am to 12 noon with Stalls, Local Delicacies, Recipe Advice, Tastings and Book Signings.

The Grand Opening – Paganum Butchery & Charcuterie

We have been busy putting the finishing touches to the new Butchery & Charcuterie building here on the farm and with “The Grand Opening” being filmed for “The Dales” Series 3 on ITV we had a deadline, the 11th of September 2012.  We finished the electrics the night before at about 10pm! So just the stage to set and make everything look the part.

So we had a little party, invited a few friends & customers, made a little food, got some local beer, arranged for it to stop raining briefly and the Farm Butchery is now officially open!

The Food: Just Meat & Beer! a fairly wide selection of meats & charcuterie, Yorkshire Chorizo Scotch Eggs, a sous vide mutton curry, a selection of PÂTÉS, Oxford Sandy Black pork rillette, crepinettes, sausages, cured meats, Yorkshire bresaola, Yorkshire chorizo and even lardo and outside on the spit roast, sticky ribs and a mixed spit of Yorkshire Dales Beef, Lamb & Pork, prepared by Nigel & Marc-Frederic.

To Drink: a couple of barrels from Old Spot, Cullingworth O.S.B 4.5% abv and the delicious Inn-Spired 4.3%abv.

Ade “cut” the ribbon & said a few words but you will have to wait to see that on ITV in early 2013.

Malham Show, Yorkshire Dales

Well it’s that crazy week again leading up to Malham Show the highlight of the calendar here in Malhamdale, the house is a buzz with baking, handicrafts, show admin, schedules, entries and on the farm sheep are being washed, trimmed and generally pampered.

Malham Show takes place under the shadow of Malham Cove on Bank Holiday Saturday (August 25th for 2012).

My vegetables have been terrible this year so a reduced entry from me, but my homemade lemonade, pickles and chutney are made and ready for judging.

The Wildman Hogroast will be serving Malhamdale Oxford Sandy & Black Pork Sandwiches with crackling, homemade stuffing & apple sauce and if your on the showfield early enough try a Paganum Bacon Buttie!

In the Farmers Market you can buy local cakes, bread, ice cream, cheese and of course charcuterie from Paganum and Yorkshire Chorizo.

Lots to see and do on the showfield all day, first classes start at 9am and main ring attractions from 12 noon.  A good show of cattle and sheep is guaranteed along with Heavy Horses and the iconic Malham Show Fell Race.

Great Yorkshire Show 2012 – Welcome to Yorkshire Lunch

The Great Yorkshire Show 2012 was the abbreviated version, for one day only, after the downpours of Tuesday afternoon the organisers decided to cancel the rest of the show, no parking and severely restricted access….

So I will miss my Demo in the Game Cookery Theatre with  Paul Mackie, Head Chef of Rudding Park scheduled for Thursday and William will miss the rest of the Sheep Clipping competition.  Apparently the remaining 500 sheep not yet clipped in the competition including our 90 hogs will still be clipped by a crack local team on Wednesday morning, wondered if they will be timing and who will be unofficial local champion?

We thoroughly enjoyed the day on the Tuesday including a splendid lunch hosted by Gary Verity and Welcome to Yorkshire with superb local produce, expertly prepared and championed by Aaron Craig, Head Chef at Yorebridge House and team.

This meal was outstanding! prepared in a field, in a tent, in the rain, the wines matched perfectly and everything really excellent quality, served just how it should be, honoured to have consumed and shared it with you.

The Welcome to Yorkshire stand was bustling with all things wonderful to eat, drink, stay and do in our County, another superb effort and I was gutted that the 154th Great Yorkshire Show 2012 was only for one day….

Todmorden Pexommier – Creamy Camembert Style Cheese

Creamy Camembert style cheese made entirely from Todmorden Organic Milk

I had heard rumours about this cheese but was not sure of the name until a chat with  @GeorgeandJoseph revealed the details, Pexommier from the Pextenement Cheese Company, Todmorden, a creamy Camembert style cheese and made only about 30 miles away.  I ordered online from www.pextenement.co.uk and this is what arrived!

Probably still a bit fresh but as the cheese was at room temperature from the journey with Postman Nigel up the Dale I could not resist a little taste.  Fantastic rich, creamy taste & texture, needs a little more maturing but wow what a fantastic local cheese…

Taste of London – Club Gascon Marmite Royale, you gotta love it or hate it!

OK Marmite! What is it? and do you love it or hate it?

“Marmite is a nutritious savoury spread that contains B vitamins, enjoyable in a sandwich, on toast, bread or even as a cooking ingredient.” Marmite.com

Personally I hate the stuff and a dish of foie gras & Marmite really does not do it for me, especially when it is even served in the Marmite pot with a chunk of bread masquerading as “soldiers” sic.

Anyway, what do I know, Club Gascon were awarded Best Dish at Taste of London Restaurant Festival taking place in Regent’s Park in that London for “Marmite Royale”

The star of the show, and winner of the Best in Taste Award 2012, was Club Gascon with ‘Marmite royale and soldiers’ a playful dish served in an authentic Marmite jar. A delighted Pascal Aussignac said “I’m honoured to win this award, especially in front of such wonderful London chefs. It’s an amazing feeling and I am so proud of my team.”  The winning dish is a grown-up twist on one of Britain’s most talked about food stuffs. He explained his inspiration behind the winning dish, “I’ve always loved to play with ingredients and create dishes that take a much loved ingredient and make people love it even more. The dish is a combination of culinary influences and techniques from my French homeland and my adopted home London.”

Coming in an admirable second place was Spice Market with black pepper shrimp and sun dried pineapple, one of the restaurant’s most popular dishes and its ‘icon dish’ at the festival. In third place was new London restaurant opening Cinnamon Soho with Bheja Fry a dish of lamb brains in mince curry.

A quick review of other peoples experiences on Marmite Royale shows you really do Love it or Hate it!

Live Beer Blogging at #EBBC12 Leeds

As part of the European Beer Blogging Conference held in Leeds in May 2012 we participated in a “Live speed beer blogging session”, 10 beers in an hour, a 5 minute pitch and taste from each brewer or brand ambassador.  Completely mad, a lot faster than it sounds and great fun, really concentrates the mind to give a brief resume of each beer, perfect for Twitter Beer Reviews…
