Had a great hogroast for a private function at the weekend, a fantastic pig that only just fitted our hogroast machine and was very well received by all, served with apple sauce, stuffing and a little salad and of course a nice bit of crackling!

New Season English Asparagus

I know English Asparagus has been available for a couple of weeks now but couldn’t resist trying simple Asparagus and Hollandaise last week at the Craven Arms, Giggleswick.

Asparagus Tip! don’t cut off the ends, just hold both ends and bend and the asparagus will break above the woody stem, keep these for soup and eat the tip end as above!

Rape seed oil dressing for Lamb

A quick recipe from Chef Mark Dale for an Extra virgin cold pressed rape seed oil dressing…

  • 6 parts rapeseed oil,
  • 1 part lemon juice,
  • 1 part white wine vinegar,
  • salt and pepper,
  • fresh chopped rosemary,
  • fresh chopped garlic,
  • ½ part wholegrain mustard,
  • ½ part honey

shake it all up and use to accompany lamb, or salad with lamb …

The First BBQ of the year

The sun stayed out just long enough in Malhamdale to have the first barbecue of the year at the weekend.  After cleaning up the BBQ from it’s winter storage we got the local charcoal going, I now use Craven Charcoal from Rathmell which is a fantastic local, sustainable resource and really does burn longer and hotter than the imported garage forecourt charcoal.  I will be supplying Craven charcoal on the local Paganum delivery round.

Salad Nicoise with Quail Eggs & English Asparagus

Salad Niçoise with new season English Asparagus & Quail Eggs

A very simple version of the classic Salad Niçoise, with a few new season Jersey Royal potatoes, and English Asparagus from Growing with Grace at Clapham and Quail Eggs from Church View Farm Eggs that I traded for our Gloucester Old Spot Sausages at the Leyburn Food Festival!

Ingredients:-

  • 2 tins of tuna
  • handful of baby plum toms, washed & halved
  • 4 or 5 Jersey Royal potatoes, boiled and roughly chopped
  • little gem lettuce leaves
  • green beans, blanched to leave a little crisp & cut into inch lengths
  • English asparagus spears
  • 6 boiled quail eggs, halved
  • a good glug of your own vinaigrette

Vinaigrette:-

Combine extra virgin cold pressed rape seed oil, white wine vinegar, a little crushed garlic, a teaspoon of dijon mustard and season with salt & pepper in a Kilner bottle or jam jar and give a good shake to combine and emulsify.

The Yorkshire Chorizo sold out and watching peoples faces as they spotted it on the stand, exclaimed “Yorkshire Chorizo” then tasted a sample was fascinating, thumbs up all round.

Jamie Oliver’s Tomato and Chorizo Salad

A couple of people have mentioned Jamie Oliver’s latest TV show on Channel 4 and a great recipe he made with Chorizo so thought I had better check it out with our own Yorkshire Chorizo!  The program is called Jamie Does Spain or Jamie Does Andalucia more specifically and starts in the beautiful Andalucian mountain town of Rhonda on one of the many bridges over the gorge.  Here is the recipe from my notes.

Tomato and Chorizo Salad

Ingredients:-

  • Yorkshire Chorizo
  • Rapeseed Oil
  • Shallot/Scallion
  • Black pepper
  • Sea Salt
  • Sherry Vinegar
  • Parsley
  • globe/tiny basil
  • Garlic Cloves

Method:-

  1. roughly chop some Chorizo and add to a frying pan with a glug of Yorkshire cold pressed extra virgin rapeseed oil (Jamie used Spanish Olive Oil but rapeseed oil is very popular with all the TV chefs at the moment and perfect for this version of the recipe)
  2. roughly chop some ripe tomatoes (should be at room temperature not out of the fridge) and place in your salad bowl
  3. slice a couple of shallots/scallion and to the bowl
  4. sprinkle with a pinch of freshly ground black pepper and a good pinch of sea salt
  5. drizzle with rapeseed oil (or olive oil)
  6. roll up a few leaves of parsley & basil like a cigar and chop/slice up and sprinkle over salad
  7. at the last minute add the finely sliced garlic to the crispy chorizo and oil in the pan and watch carefully as the garlic starts to brown add a couple of tablespoons of sherry vinegar
  8. with a slotted spoon remove chorizo and garlic from oil and add to salad, drizzle a little of the chorizo & garlic infused oil over salad (reserve the remaining oil and keep this infused oil in a jam jar in the fridge and use on pasta or to smear on a roast chicken before cooking for amazing results!)

Serve with Yellison goat’s cheese and cured meat like Iberico ham or Parma ham a glass of sherry & a lump of fresh bread, it looked superb eaten alfresco under an Oak tree in the Spanish sun…

For the Yorkshire Dales version you could use Yellison Farm Goat’s cheese, Metcalfe’s Yorkshire Rapeseed oil and Yorkshire Chorizo all available from Paganum.

Nothing can be simpler than getting a Gammon Joint from your favourite Butcher, farm shop or mail order meat supplier and either boiling or roasting for beautiful moist fresh ham.

You can keep in the fridge all week for a variety of meals and snacks, Ham sandwiches on soft white bread with English Mustard, a nice ham salad and then chop what’s left and use in a classic Pasta Ham & Parmesan Carbonnara.  Superb tasty frugal food.

Possibly not a very original use for Yorkshire Chorizo but it was fantastic! Using the Chorizo as the base for the dish,  fried in a little Rape Seed Oil gives a fantastic colour to the dish before you even add any safron!
