British Sausage Week

British Sausage week runs from the 3rd of November through to the 9th November 2008.  Are you having Sausages for bonfire night?  The best multipurpose food ever invented!  Breakfast sausage, camping staple food, BBQ greatness, simple quick family meals, sausage casserole, toad in the hole or just Sausages n’ mash.

Last of the Summer Lemonade

Just finishing the last bottle of homemade summer lemonade, now the nights have drawn in, the leaves have turned and the temperature has dropped this is like a taste of summer but still excellent and the kids love it!

Ingredients:-

  • 4 lemons
  • 3lb sugar
  • 4 pts water
  • 2oz citric acid (you can buy it from the local chemist)

Method:-

  • cut away the outside peel and zest of the lemons and place in liquidiser with half a pint of water, if large lemons cut the ends off and discard.  top speed for 1 minute.
  • pour into saucepan with remaining water and bring to boil.
  • extract juice from lemons and add sugar and citric acid to pan, stir to dissolve.
  • strain and bottle in hot sterilised bottles.

The Olive Room, Settle

New little Italian Restaurant just opened in Settle under the shambles in the market square.  The Olive room is tiny, approx 18 covers in the old stone arches of the cellar under the shambles, a beautifully atmospheric room and a tiny kitchen to match, but great food and service.  The first thing that we noticed when passing was the fantastic smell, (we hadn’t planned to even try it today) it turned out to be meat balls browning on the tiny hob.   Everything is homemade from pizza dough to dressings and ice cream, menu includes a good selection of inexpensive pizzas and pasta dishes, panini, soups and salads.

As we weren’t really planning to eat we just tried a coffee and the antipasto plate to share, including cheese, garlic bread, olives, onion balsamic relish, Parma ham, salami and melon, yummy….

UPDATE OLIVE ROOM TO REOPEN AS GUSTO!

After the closure of The Olive Room back in December 2009 I have an update! The Olive Room will be reborn as “Gusto” and opens on Wednesday the 17th February 2010.  Philipa, Paul & Andy will be continuing the Italian theme with an Italian chef, a revised and more affordable menu and extensive wine list including Champagne’s.  I’m already looking forward to trying it and watch here for a full review in the near future.

Been meaning to add something about the recent TV programme about David Aynesworths search for the perfect Yorkshire Pint recently showing on ITV Yorkshire.  David is testing various Yorkshire real ales to feature in his beer festival at The Craven Arms pub in Appletreewick in the Yorkshire Dales.  David is driven by his son Robert in “The Brigadier”, a 1930’s Bentley in which they visit and test a great selection of Yorkshire Breweries.    

Featured so far include:-

Fawcett’s Castleford Maltings, Kelham Island Brewery, Sheffield
Dark Horse Brewery, Hetton, Leeds Brewery, York Brewery, Brown Cow Brewery, Selby and the Copper Dragon Brewery, Skipton.

Ye Olde Punch Bowl Inn, Marton cum Grafton

Tried lunch at Ye Olde Punch Bowl Inn, Marton cum Grafton near Harrogate today.  This is the pub taken over and reinvented by Neil Morrissey and Richard Fox.  The pub doesn’t look much from the front but a lot of work has gone into the inside, exposed wooden beams, coal fires in 3 rooms and a modern curvy bar that all works well together.  Outside the rear of the pub the outbuildings have been completely rebuilt and now house the Morrissey Fox microbrewery.

The Food…  to start crab & coriander risotto, black pudding, potato and bacon terrine and the soup.  for mains we tried Galloway Steak & Ale Pie, Aberdeen Angus Beefburger with Mrs Kirkham’s Cheddar and the Haddock Fishcakes with a rarebit topping.   I asked for some Mayonnaise which was inspired as a ramekin of beautiful rich yellow homemade mayo arrived…  Just the one Creme Brulee for Pud and an extra spoon (delivered without asking!)  All the food was served with a smile, was delicious and demolished, if forced to pick a fault the soup was a bit average but otherwise I would recommend everything else we tried.

The Beer… to wash down the food we tried the Morrissey Fox Blonde and the Best Bitter, the Blonde is fantastic the Bitter was well… very bitter!

Great Food, Great service in a Great little pub.

Ye Olde Punch Bowl will feature on Channel 4 TVin “Neil Morrissey’s Risky Business” starting at 10pm on Tuesday the 28th October 2008, should be interesting and well worth a look.  Daily Telegraph review of the show Neil Morrissey’s Risky Business.

Eco Friendly Mail Order Meat Packaging

Some information regarding Paganum’s use of ethical packaging for shipping mail order meat to customers.  We think this is nearly as important as the quality of our meat and have spent considerable time and effort researching and perfecting this solution.

All our packaging is environmentally friendly and uses insulation produced from pure Sheep’s wool from British Sheep – an innovative use of a truly sustainable resource.  It is completely safe to use and harmless to the environment.  The wool is washed, scoured and blended into insulation felt locally here in Yorkshire and then contained in a perforated wrap to prevent any fibres coming into contact with foodstuffs whilst allowing the natural sheep’s wool to breath.  Ice sheets are then placed within the box to maintain cool temperatures.

We actively encourage the return and reuse of our packaging but people are also finding alternative uses for our packaging including insulating outdoor taps to prevent freezing, loft insulation, pipe lagging, garden kneelong pad, feeding roses, compost, hanging baskets, insulate home brew fermentation buckets, pet baskets, cushion stuffing, keeps picnics cold, keeps takeaways hot, car cool box for shopping, the list is endless if you have an innovative use for our sheep’s wool packaging please let us know.

Our delivery boxes and insulation are Biodegradable, Sustainable, Recyclable and Compostable….

Pork, Peppers & Coriander

Another simple and quick meal, using what I had on hand.  Friend dropped some fresh coriander in and I found a bag of home fed pork chops in the bottom of the freezer that needed eating!

Ingredients:-

  • Home fed locally reared pork, this was some pork steaks and a couple of chops from brother Nigel’s Pietrain Porkers.
  • 1 Red Pepper,  1 green pepper (home grown)
  • Fresh Coriander good handfull, roughly chopped, any big stalks removed
  • 1 clove chopped garlic
  • 1 inch cube fresh ginger chopped
  • Medium Onion (or use Spring/Salad onions cut on slant) using the last few of our own home grown onions
  • Salt & pepper
  • Chicken Stock Cube with 200ml boiling water to dissolve (you dont need too much fluid just the flavour)
  • 2 tins chopped tomatoes
  • Tablespoon Wharfe Valley Yorkshire Rapeseed Oil (I’m using this instead of Olive Oil for frying now)
  • Rice & teaspoon of Turmeric (Turmeric gives a fantastic colour to the rice without too much flavour and its much cheaper than saffron)

Method:-

  • Trim any fat from Pork (can be chops, steaks, filet whatever you have and cut into strips)
  • Chop, Onon, Red & Green Peppers into strips
  • Finely chop, 1 clove of garlic & 1 inch cube of fresh ginger
  • Fry pork strips, salt & pepper in the rapeseed oil until the pork is just starting to turn golden brown, remove from pan with slotted spoon and reserve for later
  • Fry onions, peppers, garlic and ginger until onions are soft in remaining oil then return Pork to pan and add tinned toms, coriander & stock.
  • Bang it all in the oven for 30 mins and serve with long grain rice (I added a teaspoon of Turmeric to the rice to give it colour)

Simple Lunch – Creamed Mushrooms on Toast

Simplicity:-

  • Fresh Mushrooms, Field mushrooms if in season otherwise locally grown
  • butter
  • table salt & ground white pepper
  • plain flour
  • milk (I used Green top mmm..)

Slice mushroms and sautee in a little butter until soft and starting to turn golden brown, sprinkle with plain flour, salt & pepper, fry off for about a minute then add a little milk & stir, keep adding a little milk until sauce has reached your desired consistency.  Toast & butter 2 slices fresh bread (I used Warburtons Blackpool Roll!) and pour creamed mushrooms over and enjoy….
